CHEESY VEGETABLE LAYER

500g | COOKED SPINACH, WELL DRAINED |
200g | SHREDDED LIGHT TASTY CHEESE |
2 LARGE | TOMATOES, SKINNED AND SLICED |
100g | MUSHROOMS, SLICED |
½ SMALL | CAULIFLOWER, COOKED IN FLORETS |
250g | NATURAL YOGHURT |
3 | EGGS |
¼ TEASPOON | NUTMEG |
METHOD:
1. PLACE SPINACH IN A CASSEROLE DISH, COVER WITH 50g CHEESE, THEN LAYERS OF TOMATO, MUSHROOMS AND CAULIFLOWER. SEASON TO TASTE.
2. BEAT TOGETHER YOGHURT, EGGS AND NUTMEG. STIR IN 100g OF CHEESE. POUR OVER THE VEGETABLES.
3. SPRINKLE WITH REMAINING CHEESE. BAKE AT 180dC FOR 25-30 MINUTES.
