Zucchini Bisque

10 lbs. | zucchini |
7 cups | diced potato |
3 ½ cups | chopped onion |
¼ cup | chopped basil |
1 Tbsp. | tarragon leaves |
38 cups | vegetable broth |
3 Tbsp. | chopped garlic |
3 Tbsp. | balsamic vinegar if needed |
5 cups | soy milk powder |
Procedure:
5. Preheat oven to 350º.
6. Put zucchini, potato, onion, dill, tarragon, vegetable broth, chopped garlic
in pot, bring to boil about 30 minutes.
7. Puree mixture with vinegar, soy sauce, and soy milk powder.
8. Simmer 15 minutes longer.
