Creamy Asparagus Soup

1 cup | diced yellow tomato |
4 tsp. | minced garlic |
2 Tbsp. | green peas |
1 cup | diced onion |
1 cup | chopped celery |
2 lbs. | asparagus spears, (separate tips) |
1 cup | cooked brown rice |
a pinch | white pepper |
8 cups | vegetable broth |
2 tsp. | low-sodium soy sauce |
2 Tbsp. | fresh basil |
fat-free vegetable oil spray
Procedure:
1. Lightly mist soup pot with vegetable spray, heat
to medium temperature, sauté onion until translucent.
2. Add celery, garlic and asparagus (except tips,) 2 Tbsp. vegetable broth, and
continue to sauté for 5 minutes.
3. Add tomato, green peas, cooked rice, remaining broth, and cook uncovered
for 2 minutes.
4. Puree mixture and return to heat.
5. Add asparagus tips and cook 5 minutes.
6. At the last minute, add basil, pepper and soy sauce.
7. Serve.
