Creamy Asparagus Soup

3 Yield 12 Portion 8 oz
    1 cup  diced yellow tomato
    4 tsp.  minced garlic
    2 Tbsp.  green peas
    1 cup  diced onion
    1 cup  chopped celery
    2 lbs.  asparagus spears, (separate tips)
    1 cup  cooked brown rice
    a pinch  white pepper
    8 cups  vegetable broth
    2 tsp.  low-sodium soy sauce
    2 Tbsp.  fresh basil

fat-free vegetable oil spray

Procedure:
1. Lightly mist soup pot with vegetable spray, heat
to medium temperature, sauté onion until translucent.
2. Add celery, garlic and asparagus (except tips,) 2 Tbsp. vegetable broth, and
continue to sauté for 5 minutes.
3. Add tomato, green peas, cooked rice, remaining broth, and cook uncovered
for 2 minutes.
4. Puree mixture and return to heat.
5. Add asparagus tips and cook 5 minutes.
6. At the last minute, add basil, pepper and soy sauce.
7. Serve.
