Almond Cookies

ALMOND COOKIES (Mandel Blumli) | |
3 c. | sugar |
1 lb. | butter |
4 | eggs, well beaten |
2 t. | cinnamon |
1 c. | shelled almonds, ground |
Rind of 2 | lemons |
3-1/2-4 c. | flour |
Combine and cream sugar, soft butter, cinnamon and grated lemon rind.
Add eggs and ground almonds and mix.
Stir in flour enough to make dough to roll (don't use too much flour). Refrigerate for several hours or over night.
Roll VERY THIN and cut with Christmas tree cutter.
Glaze with the following before baking:
Beat one egg and add 2 T. honey. Blend. Brush on tops of unbaked cookies. Bake at 375° for
