Mango Vinaigrette

1 cup | diced extra-ripe mango |
1/2 tablespoon | freshly squeezed lime juice |
Pinch | salt |
2 teaspoons | olive oil |
To prepare the vinaigrette, in a blender, combine the mango, lime juice, and salt and purée until smooth. With the machine running, slowly add the oil until incorporated. Refrigerate until needed.
