Shrimp with Peanut Sauce

2 Tb. | sliced green onions |
2 | cloves garlic, minced |
3/4 c. | chicken broth |
3 Tb. | creamy peanut butter |
1 Tb. | soy sauce |
1 Tb. | lemon juice |
1 tsp. | chili powder |
1 tsp. | brown sugar |
1/2 tsp. | ground ginger |
1 lb. | unpeeled large fresh shrimp |
Cook green onions and garlic in a skillet coated with cooking spray over medium heat, stirring constantly, about 3 minutes. Add chicken broth and next 6 ingredients, stirring until smooth. Reduce heat, and simmer 10 minutes, stirring often. Remove from heat; cool. Peel and devein shrimp, leaving tails attached. Place shrimp in sauce; turn to coat. Cover and refrigerate 1 hour. Remove from sauce; discard sauce. Thread shrimp onto skewers. Broil 6" from heat (with electric oven door partially opened) about 5 minutes on each side or until shrimp turn pink.
