    1 c  lentils
salt pepper
    3 T  olive oil
1 pork tenderloin 11/2 lb
    2 T  red wine vinegar
    2 t  Dijon mustard
    1  celery stalk
    1 med  carrot
    1/2 small  red onion
    1/2 c  walnuts chopped
    2T  fresh tarragon chopped

heat oven to 400 bring 4 c water to boil
add lentils and 1 t salt simmer stirring occasionally until tender 20 to 25 mins
drain
meanwhile heat 1 T of oil in ovenproof skillet over med high heavy
season the pork with 1/2 t salt and pepper and cook turning until brown 8 min
transfer to oven and roast through 10 to 12 mins
let rest before slicing
in lg bowl mix vinegar. mustard remaining 2 t oil
add lentils celery carrot onion walnuts and tarragon toss serve with pork
cook celery carrot onion ?
serves 4
