pork with lentils

3 T | olive oil |
1 pork tenderloin 11/2 lb | |
2 T | red wine vinegar |
2 t | Dijon mustard |
1 | celery stalk |
1 med | carrot |
1/2 small | red onion |
1/2 c | walnuts chopped |
2T | fresh tarragon chopped |
heat oven to 400 bring 4 c water to boil
add lentils and 1 t salt simmer stirring occasionally until tender 20 to 25 mins
drain
meanwhile heat 1 T of oil in ovenproof skillet over med high heavy
season the pork with 1/2 t salt and pepper and cook turning until brown 8 min
transfer to oven and roast through 10 to 12 mins
let rest before slicing
in lg bowl mix vinegar. mustard remaining 2 t oil
add lentils celery carrot onion walnuts and tarragon toss serve with pork
