Zucchini Bread

2 C | sugar |
1 C | oil |
1Tbsp. | vanilla |
2 C | loosely coarsely grated zucchini |
2 C | flour |
1 tsp | cinnamon |
2 tsp | baking soda |
1 tsp | salt |
1/4 tsp | baking soda |
1 C | chopped walnuts |
Beat eggs; add sugar, oil & vanilla. Stir in zucchini, flour, cinnamon, baking soda, salt, & walnuts. Pour mixture into greased & floured bread pans. Bake in preheated 350 oven for about 1 hr. Cool pan 10 minutes, then invert onto racks to cool completely.
