Scallion-Mint Couscous

This is just what you need to accompany the very flavorful Moroccan Braised Chicken. | |
6 c. | water |
1 stick | butter |
1 Tb. | salt |
2 | cinnamon sticks |
3 (10 oz.) boxes | plain couscous |
1 1/2 c. | sliced scallions |
1/2 c. | fresh mint leaves, chopped |
1. In a large saucepan, bring water, butter,salt, and cinnamon to a boil. Add couscous, stir, cover, remove from heat, and let sit for 5 minutes.
2. Add scallions and fluff cousocus with a fork. Place in a dish and garnish with chopped mint.
