Smoke with apple wood
    2 racks  spare ribs
Rub very lightly with the following mix
    1 1/2 tablespoons  kosher salt
    1 tablespoons  pure chile powder
    2 tablespoons  light brown surgar
    1 tablespoons  granulated garlic
    1 tablespoons  paprika
    2 teaspoons  dried thyme
    2 teaspoons  ground cumin
    2 teaspoons  celery seed
    2 teaspoons  ground black pepper
Mop sauce
    1 cup  apple juice
    1/2 cup  cider vinegar
    2 tablespoons  worcestershire sauce
      BBQ Sauce
    2 cups  ketchup
    1 cup  apple juice
    1/3 cup  cider vinegar
    2 tablespoons  Worcestershire sauce
    2 tablespoons  honey
    2 tablespoons  above rub

Mix and cook medium heat for 5 min. Remove from heat.

Cook at 250 to 275 for 5 to 6 hours bast with mop sauce every 2 hours.
After the meat has shrunk back at least a 1/2 inch. In several places brush ribs with the BBQ sauce. Cook ribs 30 min. To an hour longer.
