Rolled Olive Sandwiches

1/2 c. | chopped pecans |
16 | thin white or wheat sandwich bread slices |
1 (8 oz.) pkg. | cream cheese, softened |
1 c. | diced salad olives |
1/2 c. | mayonnaise |
1/4 tsp. | pepper |
Preheat oven to 350 degrees. Bake pecans in a single layer in a shallow pan 6 minutes or until toased and fragrant. Remove from pan, and let cool 10 minutes. Cut crusts from bread slices; reserve crusts for another use. Flatten slices with a rolling pin. Stir together pecans, cream cheese, and next 3 ingredients. Spread 2 Tb. cream cheese mixture on 1 side of each bread slice. Roll up tightly; cover and chill 3 hours. Cut each roll into 4 slices using a serrated knife.
