Zucchini Cake

Ingredients: 2 CupsZucchini; (peeled and shredded) | |
1/2 Cup | Oil |
A few drops | vanilla essence |
2 Cups | All purpose flour |
11/4 Cups | Sugar |
1 Teaspoon | Baking soda |
11/2 Teaspoon | Baking powder |
1/3 Cup | Cocoa powder |
1/2 Teaspoon | Salt |
2 Teaspoons | Sliced almonds |
crushed walnuts, alternative |
Instructions:
1. Preheat the oven at 350 F.
2. Mix shredded zucchini, oil and vanilla essence.
3. Mix flour, sugar, cocoa powder, baking powder, salt and baking soda. Add the zucchini mixture, walnuts or almonds to the dry ingredients and fold well.
4. Transfer the batter into a greased baking pan and bake for about 25 minutes. Then turn off the oven and let the cake be in the oven for another 5 minutes.
5. Use chocolate frosting or any other frosting of choice.
