Chocolate chip pecan pie (gluten-free). From Penzeys spices book

2/3 cup | white sugar |
1/2 tsp | salt |
1/3 cup | dairy- free margarine, (I use smart balance) |
1 cup | light corn syrup |
2 tsp | PURE Vanilla Extract |
1 cup | pecan halves |
3/4 cup | dairy & wheat-free chocolate chips, (regular chips have milk) |
Beat together the eggs, sugar, salt,margarine, corn syrup & vanilla. Stir in pecans and chocolate chips. Pour into deep dish pie crust. Cover the edge of the crust with foil. Bake at 375 until set, about 40 - 50 minutes.
