Mini meatballs

Mini Meatballs: | |
1 lb. | ground turkey |
1/2 cup | minced onion |
1/2 bunch | fresh spinach, washed well |
1 slice | wheat bread, torn into small pieces |
4 T. | tomato paste |
1/4 cup | wheat germ |
1/4 tsp. | salt |
1/2 tsp. | paprika |
Preheat oven to 325'. Brown turkey and onion until well cooked and onion is soft. Drain off liquid. Steam spinach until soft; press out liquid. Place all ingredients into a food processor and pulse until mixed but not pasty...leave some texture. Roll into little balls-- app. 1 T. each ball. Place on a baking sheet lined with foil and lightly sprayed with Pam, or best way is use a Silpat sheet. Bake for 12 minutes. Meatballs will be soft. Makes around 50 meatballs, and they freeze very well. Microwave frozen balls around 15 sec. each to thaw individually.
