Ingredients: For Burger patties
    650 g  lean beef mince
    1 x  brown onion, brown, finely diced
    2 x  cloves garlic very finely dice
    3 tablespoons  tomato sauce
    2 tablespoons  Worctershire sauce
    ½ teaspoon  mixed dried herbs
    1 x  egg, free range
    Pinch  sea salt
      Freshly ground black pepper
Additional
      Olive oil, for cooking
    A  good cheddar cheese
    1 Jar  mayonnaise, preferably egg
    1 Jar  pickled sliced jalapenos
      Hamburger buns

Method

Put everything – except cheese, olive oil, mayonnaise and jalapeno’s in to a large mixing bowl and mix until very well combined and fragrant. Cover with plastic wrap and let stand for 30 minutes to one hour so flavours can evolve and combine.

Put a generous amount of olive oil in to a non-stick fry pan and put over medium high heat. While waiting for the oil to come up to temperature take a handful of mince mixture and form into a large ball and then while holding the ball in the left hand flatten it down with your right hand so that you are left with a large round patty about 2 cm thick – it should be a little larger than your hand. The patties shrink as they cook so don’t be worried if the patties are larger than the bread roll you will put them in when you construct your hamburger.

Carefully place your patty into the hot oil and repeat the process. I can normally fit three patties at a time into my fry pan.

Cook for several minutes on medium high then flip over and cook for another three or four minutes then turn the heat down to a medium and cook gently turning two more time until they are cooked through.

On the last turning I will put fresh three slices of cheddar cheese on the top of the burger and allow that to melt before putting the patty onto my burger bun.

Makes about 8 burger patties.

To make burgers cut you hamburger rolls in half and lightly toast both sides. To make your classic burger assemble by starting with putting your meat pattie on the bun, add a squirt of tomato sauce then layer on top with fried egg and bacon, a slice of beetroot, some grated carrot, slices of cucumber and finely some lettuce.

Or for something a little different spread a little jalapeno mayo on the bottom bun then place your meat pattie on top, add a squirt of tomato sauce then cover that with some of my beer beetroot chutney, a slice of tomato and a piece of lettuce. Simply delicious!

For jalapeno mayo finely mince a teaspoon or two of pickled jalapenos (Old El Paso in a jar from the supermarket) and combine with two tablespoons of good egg based mayo.
