    2 pounds  potatoes, (sweet or russet)
    2 tablespoons  low-sodium vegetable broth
    4 cloves  garlic, minced
    2 teaspoons  onion powder
    1/2 teaspoon  seasoning of choice, (such as chili powder or curry powder)

Preheat oven to 400F. Line 2 rimmed baking sheets with parchment paper. Slice potatoes into thin
matchsticks and place in a large bowl with broth. Toss until coated. Add garlic, onion powder and
seasoning and toss until evenly coated. Place potatoes in a single layer on prepared baking sheets.
Bake 15 minutes. Turn potatoes and continue to bake 15 to 20 minutes longer or until crisp-tender.
