Delicious summer zucchini in a bold tomato and garlic. Ingredients | |
4-6 medium | zucchini |
2 oz. | extra virgin olive oil |
2 lg. | garlic cloves, sliced |
1 can | whole Italian plum tomatoes |
6-8 | fresh basil leaves |
1 pinch | salt |
white pepper |
Directions
1 Cut zucchini into thick, julienne-style strips.
2 Simmer sliced garlic in olive oil over very low heat.
3 Add zucchini and saute over medium heat until they start to become translucent.
4 Add tomatoes, salt, and pepper. Crush tomatoes in the sauce.
5 Continue stirring over medium heat until zucchini is cooked.
6 Rough chop the basil leaves and add at the last minute.
