    16 large  queen olives, pimiento removed
Spicy Lamb Sausage
    1 large  egg, lightly beaten
    1 cup  all-purpose flour
    1 cup  panko, (Japanese breadcrumbs)
      Canola oil
Preparation 1. Slice olives open lengthwise almost all the way, leaving bottom end attached. Stuff each olive with 1 rounded teaspoon Spicy Lamb Sausage. (Olive won't close all the way around filling.) 2. Whisk together egg and 1 tablespoon water in a small bowl. Dredge olives in flour, dip in egg mixture, and dredge in panko. 3. Pour oil to a depth of 2 inches into a Dutch oven; heat to 350°. Fry olives, in batches, 3 minutes or until golden; drain on paper towels. Spicy Lamb Sausage This recipe goes with Fried Olives Stuffed with Spicy Lamb Sausage Yield: Makes about 1 1/4 cups Ingredients
    1 tablespoon  unsalted butter
    1/4 cup  finely chopped onion
    1/4 teaspoon  chopped garlic
    1 tablespoon  sherry vinegar
    1 1/2 pounds  ground lamb
    1/4 teaspoon  ground red pepper
    1/8 teaspoon  hot paprika
    1/4 teaspoon  cumin
    1/8 teaspoon  crushed fennel seeds
    1/8 teaspoon  kosher salt
    1/8 teaspoon  freshly ground black pepper

Preparation
1. Melt butter in a small skillet over medium-high heat. Add onion; cook 5 minutes or until golden brown. Add garlic, and cook 1 minute. Add sherry vinegar; cook 2 minutes, stirring to loosen particles from bottom of skillet; cool slightly.
2. Combine lamb and next 6 ingredients in a medium bowl. Stir in onion mixture.
