Cabbage Salad with Lemon Dressing and Black Olives

| 1 | White Cabbage |
| 12 | Black Olives |
| For dressing: | |
| 6 tsp | extra virgin olive otl |
| 2 tbsp | lemon juice |
| 1 garlice clove crushed | |
| 2 tbsp | finely chopped flatleaf parsley |
Cut cabbage in quarters and discard outer leaves along with core and hard bits.
Lay each quarter and cut into long very thin slices. Place in bowl and stir in black olives.
Make dressing by whisking in bowl.
Pour over salad until coated
