BANANA- BUTTER PECAN ICE CREAM

The Wonderful Flavors of Banana and Butter Pecan togeather, The Mixture should be made Early in the day or night before, It needs Chill Time, Before putting it in the Ice Cream freezer. |
SERVINGS: 24 ( 1/2 CUP )
INGREDIENTS:
1½ cupsFinely Chopped Pecans (after Toasting )-
2 Tabsps. Butter (melted )
1 1/2 Cups Packed Brown Sugar –
2 Cups Whipping Cream –
6 Egg Yolks –
1/2 Cup Granulated Sugar –
1 Tsp. Vanilla –
3 Ripe Bananas –
4 Cups Whole Milk .
1/4 Tesp. Salt
DIRECTIONS:
FOR PECANS: In a Bowl Put Melted Butter and Salt, Put In Pecans and Toss to Coat, Spread Pecans on a 15 x 10 x 1 " Baking Pan, Bake at 350 in preheated oven , Stirring Once , for 8 to 10 minutes untill Toasted ,Take out ,let cool and then finely chop them - SET ASIDE - In a Medium Saucepan,combine Brown Sugar and 1 1/2 cups whipping cream; Cook and Stir over Medium Heat till the Sugar is Melted- In a Bowl Whisk togeather Egg Yolks and remaining Whipping Cream ; slowly and gradually whisk in 3/4 cup of the hot Brown Sugar Mixture from the Pan into the Egg Yolks and cream mixture, Gradually add this mixture back to the mixture in the pan. - Cook and Stir over Medium Heat Till Bubbles begin to form - (190 f ) Remove from Heat - Whisk in Granulated Sugar and Vanilla - Let Set and COOL for 30 minutes , Then Cover and Chill in Frig. for 4 to 24 Hours. - When Mixture is Chilled and ready to put in Ice Cream Freezer - In a Bowl Mash the Bananas ( should have 1 cup ) and Gradually stir into the Chilled Mixture and pour in the whole Milk - Pour into the Ice Cream Freezer , 4 Or 5 Quart Freezer, Freeze according to the Freezers Directions, Stir in the Pecans, Let sit to Ripen at Least 4 hours.
