Mushroom, spinach and turkey lasagna

250g | turkey mince |
300g | sliced mushrooms |
1 cup | low fat ricotta |
1 box | frozen spinach defrosted & drained |
1 | onion |
3 cloves | garlic |
1 tin | if diced tomatoes |
1 tbs | balsamic vinegar |
1 packet | wholemeal lasagna sheets |
1. Sauté onion & garlic. Add mince, tomatoes and tomatoes until mince is cooked. Stir balsamic vinegar through
2. Mix spinach & ricotta together
3. Start with a layer of sauce add a lasagna sheet, continue to add lagagna, mince mix and ricotta/ spinach.
4. Finish with ricotta/ spinach mix
5. Cook at 180• for
6. Cut into portions when cool & freeze remainder portions ready to defrost at your conveniance!
