Black Bean Salsa

1 | finely chopped red pepper |
1/2 | finely chopped red onion |
1/2 cup | chopped cucumber |
1 plump diced tomato | |
1 Stalk | chopped celery |
1/4 | fresh chopped basil |
1/4 cup | EVOO |
1/4 cup | balsamic vinegar |
2 Tbs | lime juice, (1 lime) |
1 tsp | thyme |
1 tsp | salt |
1 tsp | ground cumin |
1 tsp | chili powder |
1/2 tsp | black pepper |
6 | minced garlic cloves |
4 15oz cans | black beans rinsed and drained |
Combine all ingredients, stir well and chill for at least 2 hours.
