    1 1/2 cup  whole milk, room temp
    7 large  egg whites, room temp
    1  whole egg, room temp
    1 tbsp  vanilla
    1/2 tsp  almond extract
    4 cups  cake flour, sifted
    2 1/4 cups  sugar
    1 3/4 tbsp  baking powder
    1 tsp  salt
    1 1/2 sticks  unsalted butter, room temp, cut into cubes
    6 tbsp  vegetable shortening
Preheat oven to 350. Grease, line with parchment paperand flour 2 round 8" pans (you'll have to use each one twice). In a medium bowl, combine and stir the egg whites, whole egg, 1/2 cup of milk, vanilla and arhe almond extract. Set aside. Sift cake flour twice. In the bowl of an electric mixer fitted with a paddle attachment combine the dry ingredients, including the sugar, together on low speed for 30 seconds. Add the butter and shortening, blending on low speed for about 30 seconds, then add the remaining 1 cup of milk, and mix on low speed until just moistened. Increase to medium speed and mix for 1-1 1/2 mins, but no more. Scarpe the sides of the bowl and begin to add the egg, milk extract mixture in 3 separate batches. Beat on medium speed for 20 seconds after each addition. Pour 1/4 of the batter into each prepared pan. Bake cake layers, 2 at a time, center of oven and 2" apartfor 20 mins. Let cool on rack for 10 mins before loosening sides. Frosting:
    5 sticks  unsalted butter, softened and cut into cubes
    5 1/4 cups  confectioners sugar, sifted
    4 1/2 tbsp  milk
    1 1/2 tbsp  vanilla

Pinch or two of salt

Whip butter for 8 mins with paddle attachment on medium speed.

Add remianing ingredients and mix on low speed for 1 min, then on medium speed for 6 mins.
