Banana Split Icebox Cake

16 oz | whipped cream thawed |
8oz | sour cream |
1 3.4oz instant vanilla pudding mix | |
8oz | crushed pineapple drained |
24 graham crackers | |
3 medium | bananas sliced thin |
Sliced fresh strawberries | |
Chocolate drizzle: | |
1/4 cup | heavy cream |
1/4 cup | semi-sweet chocolate chips |
Mix whipped topping, sour cream, & pudding mix until blended. Fold in pineapple. Fill ziplock bag with mixture and cut off corner of bag.
On flat plate, arrange 4 graham crackers in a rectangle. Pipe 1 cup of mix over crackers; top with 1/4 cup banana slices. Repeat layers 5 times (6 total). Cover & refrigerate overnight. Graham crackers should be soft.
Before serving, make chocolate drizzle. Heat cream 20-30 seconds in microwave. Place chocolate chips in a bowl & pou hot cream over the top. Let sit for a moment & stir until smooth. Let cool slightly while preparing bananas & strawberries for topping.
Arrange sliced fruit on top. Drizzle & serve.
