Roasted sweet potato & apples

This is a wonderful winter side dish or even dessert! Perfect for Thanksgiving or Christmas. Ingredients | |
3 large | sweet potatoes, peeled, cut in half lengthwise, and sliced 1/4 inch thick |
1 Tbs. | vegetable oil |
4 medium | crisp apples, peeled, cored, and cut into eights |
1/4 C. | maple syrup |
ground cinnamon, to taste | |
ground nutmeg, to taste | |
salt, to taste |
Directions
Preheat oven to 425 degrees. Lightly oil a nonstick roasting pan. Combine sweet potatoes and oil in mixing bowl and toss to coat. Transfer to prepared pan. Bake for 15 minutes, stirring after first 10 minutes.
Add apples and drizzle the mixture evenly with maple syrup. Sprinkle with a small amount of cinnamon, nutmeg, and salt, and stir mixture together.
Bake, stirring occassionally, for 15 minutes, or until tender and lightly browned.
