Ingredients:
    32 fl oz  liquid, (Chk stock)
4-5 kaffir lime leaves - shredded 10" lemongrass - bruised 2" galangal - sliced dollop red curry paste
      Fish sauce
lime juice
    8 oz  chicken, cubed
    8 oz  mushrooms, quartered
    10 fl oz  coconut milk, (large can)

few red Thai chilies - thinly sliced
cilantro

Simmer the lime leaves, lemongrass, galangal, and paste in the stock until it has a flavor (30-45 min)
Strain, season w/ fish sauce, and lime juice.
Bring back to simmer, cook chicken, mushrooms until done (7 min)
Add in coconut milk, bring just to a simmer, turn off the heat.

Garnish w/ Thai chilies & cilantro (maybe fish sauce roasted peanuts)
