Ginger Lime Chicken (WW)

1/4 c. | low sodium soy sauce, (I used regular) |
3 T | fresh lime juice |
2 t | finely minced lime zest |
2 T | finely minced or grated ginger root |
2 medium | garlic cloves, minced |
1 T | honey |
1 T | chili oil, or other hot oil (I used olive oil and added red pepper flakes) |
1/4 c. | fresh, chopeed cilantro - divided |
1 pound | uncooked boneless skinless chicken breasts, 4 pieces |
2 T | finely minced uncooked scallions |
In a large bowl, combine soy sauce, lime juice, lime zest, ginger, garlic, honey, oil & 2 T cilantro; mix well. Remove and reserve 2 T of the marinade. Add chicken to bowl, tossing to make sure each piece is coated, refrigerate for 2 - 4 hours.
Preheat broiler to high. Remove chicken from marinade and place in a flameproof baking dish, discard marinade. Broil chicken, 4 to 6 minutes, flip and brush chicken with reserved marinade.
Return chicken to the broiler and broil until chicken is cooked through, 4 - 6 minutes more.
To serve, sprinkle chicken with scallion, remaining cilantro and any sauce left in baking dish. Yields 1 chicken breast and about 1/3 c. sauce per serving. 5 WW points.
