Barley salad

2 cups | arugula |
1 cup | red bell pepper |
3 tbs | sun dried tomatoes |
1 can | chickpeas |
2 tbs | lemon juice |
1/2 tsp | crushed red pepper |

2 tbs | pumpkin seeds |
Place 1 cup barley in baking dish with lid. Add 2 cups boiling water, foil, lid. Bake 1 hr
