Fried Green Tomatoes

|3||whole green tomatoes, sliced|
|1 1/2 cup||flour, seasoned with salt and pepper|
|3 whole red heirloom tomatoes|
|1 1/2 cup||panko bread crumbs|
1. Blanch red tomatoes in boiling salted water for 17 seconds and shock in ice water. 2. Peel tomatoes, cut in half and squeeze seeds out. 3. Rough chop the tomatoes. 4. Add to pan with olive oil and salt and cook down over low heat. Reduce till concentrated. 5. Serve with green tomatoes.
Beat eggs well with 1/4 cup water. Bread green tomatoes and season well. Fry in olive oil till crispy and brown.
