PIE - Dutch Apple

2 c | flour |
1 c | packed brown sugar |
3/4 c | margarine, melted |
1/2 c | quick-cooking oats |

2/3 c | sugar |
3 tbsp | cornstarch |
1 1/4 c | water |
3 c | diced peeled tart apples |
1 tsp | cinnamon |
1/2 tsp | apple pie spice |
1 tsp | vanilla |
Combine the first 4 ingredients; set aside 1 cup for topping. Press remaining crumb mixture into an ungreased 9 inch pie plate; set aside. For the filling, combine sugar, cornstarch and water in a saucepan until smooth; bring to a boil Cook and stir for 1 minute or until thickened. (Add cinnamon and apple pie spice to diced apples and mix together.). Remove from the heat; stir in apples and vanilla. Pour into crust; top with reserved crumb mixture. Bake at 350 for 40-45 minutes or until crust is golden brown.
