Chicken Lo Mein

1 1/2 lbs | chicken breast |
4 cloves | garlic |
1/2 tsp | Ginger root |
1/4 c | mushroom soy mixed with 1 tsp sugar |
1/2 c | peanut oil |
2 c | bean sprouts |
1 pkg | pea pods |
5 | mushrooms |
3 | scallions |
2 | carrots |
2 T | dry sherry |
white wine, alternative | |
8 oz | linguini cooked & tossed with 1 T of the oil |
In a bowl mix chicken, garlic, Ginger, and 1 T of the sugar-soy mixture. Heat 3 T of the oil and add chicken mixture- stir-fry until chicken is cooked. Remove to a large bowl.
Add 2 T more oil to wok. Add vegetables and stir-fry 1 minute. Add sherry, cover and cook 1 minute.
Using a slotted spoon, lift out vegetables & add to chicken. Discard remaining liquid. Add remaining 2 T oil and the linguini. Stir-fry 2-3 minutes. Add remaining soy mixture and coat noodles. Add chicken and vegetables.
