Chicken Lo Mein

    1 1/2 lbs  chicken breast
    4 cloves  garlic
    1/2 tsp  Ginger root
    1/4 c  mushroom soy mixed with 1 tsp sugar
    1/2 c  peanut oil
    2 c  bean sprouts
    1 pkg  pea pods
    5  mushrooms
    3  scallions
    2  carrots
    2 T  dry sherry
      white wine, alternative
    8 oz  linguini cooked & tossed with 1 T of the oil

In a bowl mix chicken, garlic, Ginger, and 1 T of the sugar-soy mixture. Heat 3 T of the oil and add chicken mixture- stir-fry until chicken is cooked. Remove to a large bowl.

Add 2 T more oil to wok. Add vegetables and stir-fry 1 minute. Add sherry, cover and cook 1 minute.

Using a slotted spoon, lift out vegetables & add to chicken. Discard remaining liquid. Add remaining 2 T oil and the linguini. Stir-fry 2-3 minutes. Add remaining soy mixture and coat noodles. Add chicken and vegetables.
