Cut eggplant into thick slices | |
1/2 cup | Italian bread crums |
Salt | |

1 | beaten egg |
1/4to 1/3 cup | olive oil |
Salt both side of eggplant
Lay between paper towels till dry
Dip eggplant in egg and coat in bread crums
Serve eggplant slices with pasta
Grated parmisan
