Apricot-Mustard Chicken Breasts

12 ounces | chicken breast, no skin, no bone, R-T-C |
1/4 cup | Dijon mustard |
3 tablespoons | apricot preserves |
1 tablespoon | soy sauce, Tamari |
1 tablespoon | scallions finely chopped |
2/3 cup | water |
In a large no-stick skillet stir together the water, mustard, preserves, soy sauce and scallions. Add the chicken. Bring to a simmer over medium high heat, then reduce heat. Gently simmer for 15 to 18 minutes, or until chicken is tender. (If the sauce becomes too thick, add more water during cooking.)
Nice served over rice.
