Tomatillo Salsa

1 pound | tomatillos |
4 ounces | Anaheim chili peppers chopped |
1/2 cup | chopped cilantro |
3 tablespoons | minced garlic |
1/2 teaspoon | salt |
2 tablespoons | cider vinegar |
tabasco sauce to taste | |
Cook tomatillos (remove husks, place tomatillos in saucepan, fill with water to cover, simmer covered until tomatillos are soft and dark in color).
Drain tomatillos. Throw tomatillos in the blender. Save liquid. Add chili peppers, garlic, salt, cider vinegar and cilantro. Blend until smooth. Add 1 cup of liquid (or more depending on how thick you want it.). Ta da, you're done. Add tabasco or cayenne pepper sauce to taste (particularly if the anaheims are too mild).

Background: Notes: For the peppers you could use jalapenos or any other type of hot pepper. I wouldn't recommend a sweet pepper, since the tomatillos are pretty sweet already.
