Tuna Fish Salad

1 lbs | Ring Macaroni |
24 ounces | water packed tuna, 2 large cans, drained |
1/2 cup | minced vidalia, or other sweet onion or sliced scallions |
1/2 cup | mayonnaise |
1/2 cup | low fat sour cream |
3 | hard boiled eggs diced, yolks reserved |
Cook macaroni. Drain tuna, mix with mayo and hard boiled egg yolks until smooth. Add macaroni, onions and diced egg whites and mix.
Needs more vegetables, things that aren't too hard (peapods? cucumber? zucchini? quartered cherry tomatoes?)
