Lemon Squares

| 1/2 C | confectioner sugar |
| 2 C + 6 T | flour, divided |
| Pinch | salt |
| 1 C | butter, room temp, sliced into 8 pieces |
| 4 | eggs |
| 2 C | sugar |
| 6 T | lemon juice |
Grated rind of one lemon
Preheat oven to 350. Lightly grease 13x9 pan. In food processor blend confectioner sugar, 2 C flour and salt. Add butter and pulse until crumbly. Press into pan and bake for 20 mins.
Meanwhile, beat eggs, 2 C sugar, 6 T flour and lemon juice until well combined. Stir in rind. Pour on top of hot crust and bake for an additional 25 mins. Cool completely then sprinkle with confectioner sugar. Cut into squares.
