Cornbread Muffins

Ingredients
    1 1/2 c  flour
    2/3 c  sugar
    1/2 c  cornmeal
    1 tbsp  baking powder
    1/2 tsp  salt
    1 1/4 c  milk
2 lrg eggs, lightly beaten
    1/3 c  veg oil
    3 tbsp  butter, melted
      margarine, melted

Directions

Preheat oven 350 degrees. Grease or paper-line 18-20 muffin cups

Combine flor, sugar, cornmeal, baking powder and salt in med. sized bowl, mix well. Combine milk, eggs, veg. Oil, butter in a sml bowl. Add to flour mixture stir just until blended. Pour into prep muffin cups 2/3 full.
