| 1 | yellow onion, coarsely chopped |
| 1 clove | garlic crushed |
| 1 ea | white potato, chunked |
| 1 | carrot sliced |
| 1 stalk | celery sliced |
| 1/2 cup | broccoli chopped |
| 1 | zucchini sliced |
| 1 | leek trimmed, washed and sliced |
| 2 cups | tomato sauce low-sodium |
| 1 tablespoon | parsley flakes |
| 1/2 teaspoon | paprika |
| 1/2 teaspoon | dried basil |
| 1/2 teaspoon | chili powder |
| 1/4 teaspoon | dry mustard |
| 1/4 teaspoon | ground cumin |
| 1/8 teaspoon | black pepper |
Cook the onions, garlic, potato, carrot, and celery in a small amount of water in a large saucepan for 10 mins. Add the remaining ingredients and cook over low heat until the vegetables are tender, about 35 mins.
