Easy Lemon Squares

| 1 cup | unsalted butter, chilled and cut into small pieces |
| 2 cups | flour |
| 1/2 cup | confectioners sugar |
| 1/4 tsp | salt |
| Filling: | |
| 6 tbsp | flour |
| 4 | eggs |
| 2 cups | sugar |
| 6 tbsp | fresh lemon juice |
| 2 tsp | grated lemon rind |
Preheat oven to 350. Mix butter, 2 cups flour, confectioners sugar and salt as you would a pie crust in a food processor. Pulse until mixture resembles course crumbs. Press mixture into 9x13 pan. Bake 20 mins.
Whisk together filling ingredients until smooth. Pour over baked crust. Bake 25 minutes longer. Let cool completely. Sprinkle with confectioners sugar to garnish. Chill before serving.
