4 large | chicken breasts |
1/2 tsp | Salt |
1/4 tsp | Pepper |
2 T | Olive oil |
2T | Butter |
3T | chives |
3T | parsley |
Lemon juice, approx 1/2 of a lemon | |
2 tsp | Dijon mustard |
1/4 cup | chicken broth |
1. Pound chicken and sprinkle with salt and pepper
2. Heat 1 T each oil and butter
3. Cook chicken over high heat 4 min each side and transfer to platter
4. Add 3T chives, lemon juice, 3T parsley and 2t mustard. Cook 15 seconds whisking constantly.
5. Add 1/4C broth and stir until smooth. Add 1T butter and 1T oil and melt.
6. Poor mixture over chicken
