Applesauce Pancakes

1 c | unbleached flour |
1/2 c | whole wheat flour |
1 1/2 tsp | baking powder |
1 c | rice milk |
3/4 c | applesauce |
1 tsp | vanilla extract |
1 tsp | egg replacer, mixed w/2 tbs water |
Mix the dry ingredients together (except the egg replacer) in a bowl. Mix the wet ingredients together. In a separate bowl, beat the egg replacer and water until very frothy. Add to the wet ingredients. Combine the wet and dry ingredients and beat until well blended. To serve, spread a little applesauce over them and sprinkle with cinnamon.
