Oven steamed rice

1 1/2 cups | white or mixed rice |
1 1/2 tsp | salt |
Dash | pepper |
3 1/2 cups | boiling water |
Butter |
In a 1 1/2 quart ungreased casserole dish with tight fitting lid (or use a piece of aluminum foil tightly fitted) combine rice, salt, and pepper. Dot with butter and pour boiling water in and stir until butter is melted. Cover and bake for 45 minutes in 350 degree oven. Do not peek or stir. Fluff lightly before serving. Can be doubled. Use a 3 quart casserole but do not increase the cooking time.
