Cupcake peanut and chocolate ganache

0.5 cup | dark brown sugar |
1.25 cup | cake flour sifted |
1.5 tsp | baking powder |
0.25 tsp | salt |
2/3 cups | whole milk |
1 tsp | vanilla extract |
Oven 400F. Line 12 cup muffin tray with paper liners Cream peanut butter until light, add sugar and beat about 3 mins Add egg. Sift flour, baking powder, salt Add flour in thirds, alternate with milk and vanilla Mix until batter smooth Divide batter into cups about 1/3 cup Bake until pale gold 15-20 mins | |
Frosting | |
1/3 cup | whipping cream |
4 oz | bittersweet chocolate chopped |
1/3 cup | chopped peanuts |
Microwave cream to boiling about 1 min high
Add chocolate, microwave 1.5 min high
Let stand a while, whisk until thick and glossy
Use 1 tsp per cake
Top with peanuts
