Broccoli Frittatas

1 pound | broccoli, trimmed |
1/4 cup | olive oil |
1/2 pound | fresh mushrooms, sliced |
2 cloves | garlic |
3/4 teaspoon | fresh ground pepper |
7 each | eggs, beaten |
1/2 cup | parmesan cheese, grated |
1/2 pound | muenster cheese, shredded |
1/3 pound | salami, thinly sliced strips |
Preheat oven to 350F. Cut the broccoli into bite size pieces. Heat the oil in a 10-inch skillet, then add the broccoli, mushrooms and garlic. Stir, cover and steam for 3 minutes. Add the pepper, cheese and salami to the eggs and pour over the broccoli. Sprinkle with the parmesan cheese and bake, uncovered, for 25 to 30 minutes or until set.
