Broccoli Frittatas

    1 pound  broccoli, trimmed
    1/4 cup  olive oil
    1/2 pound  fresh mushrooms, sliced
    2 cloves  garlic
    3/4 teaspoon  fresh ground pepper
    7 each  eggs, beaten
    1/2 cup  parmesan cheese, grated
    1/2 pound  muenster cheese, shredded
    1/3 pound  salami, thinly sliced strips

Preheat oven to 350F. Cut the broccoli into bite size pieces. Heat the oil in a 10-inch skillet, then add the broccoli, mushrooms and garlic. Stir, cover and steam for 3 minutes. Add the pepper, cheese and salami to the eggs and pour over the broccoli. Sprinkle with the parmesan cheese and bake, uncovered, for 25 to 30 minutes or until set.
