Steam Yam Cake

Use a 7" x7" square pan. Lightly oil the inner surface before use. Ingredients | |
200g | to 250g Yam, clean and diced to about 1cm square |
4 tbsp | Dried prawns, soaked and pounded |
2 tbsp | Chay ooh, (preserved radish) |
1 tsp. | Five-spice power |
4 cloves. Garlic, chopped | |
6 tbsp. | Oil |
Ingredients for Batter | |
300 g. | Rice flour |
75 g. | Tapioca flour |
1200 ml. | Water |
3/4 tsp. | Alkaline water |
Seasonings | |
14 g. | Chicken power |
1/2 tsp. | Pepper |
1/2 tbsp. | Salt, (to taste) |
Garnishing 1 stk. Spring onion | |
2 | Chillies |
3 tbsp. | Fried shallots |
2 tbsp. | Peanuts, coarsely chopped |
Methods
1. Heat up the oil, sauté garlic until fragrant, add dried prawn and stir untl aromatic. Add yam, preserved rad dish, 5-spice power and stir until fragrant.
2. Add batter, seasonings and stir untl the batter is half-cooked. Use low to medium heat. Taste to adjust seasoning, if necessary. Pour mixture into an oiled 7" x 7" pan. Steam with high heat for 50 minute to 1 hour, or until cook
3. Remove from heat, and let it cools for 10 minutes. Apply a thin layer of oil to the surface. Sprinkle the garnishing on top and let it cools.
