Roasted Poblano Chile and Cilantro Mashed Potatoes

1/2 cup | butter |
1/3 cup | garlic cloves peeled |
1 poblano chili, stem and seeds removed | |
1 Tbs. | finely minced fresh cilantro |
Heat oven to 325
Place butter, garlic, and chili in small, covered, ovenproof pot. Bake 1 hour
In food processor, purée mixture to fine consistency. Add purée mixture to potatoes while mashing. When finished mashing, fold in cilantro. Purée can be prepared in advance, store in covered glass jar in refridge
