Seared Sesame Salmon with Bok Choy

1 Tbsp | soy sauce |
ginger root, 1 inch | |
1 tsp | sesame oil |
4 | skinless salmon fillets |
2 tbsp | sesame seeds |
lime wedges, to serve | |
2 small | bok choy |
1 bunch | scallions |
1 tbsp | sunflower oil |
1 tsp | sesame oil |
salt and pepper |
Peel and grate the ginger, then combine with soy sauce and sesame oil in shallow dish that is large enough to hold the salmonn filets in a single layer. Add the salmon fillets, turning to coat evenly on both sides. Sprinkle both side salmon with sesame seeds.
Cut bok choy lengthwise into quarters. Cut the scallions into think diagonal slices.
Preheat a heavy bottom skillet. Add the almon and cook for 3-4 minutes. Turn and cook for an additional 3-4 minutes.
Meanwhile, heat the sunflower and sesame oils in a wok, add the bok choy and scallions and stir fry for 2-3 minutes. Season to taste with salt and peppper.
Divide the veggies among the plates and put salmon on top.
Serve immediately with lime wedges for squeezing over.
