~1lb sweet Italian sausage- sliced
~1lb boneless skinless chicken breast- cubed
~3T vegetable oil
~1 medium sweet red bell pepper- chopped
~1 medium onion- chopped
~3 celery ribs- chopped
~1t dried marjoram
~1t dried thyme
~1/2t garlic powder
~1/2t cayenne powder
~3 (14.5oz) cans chicken broth
~2/3C white rice
~1 (14.5oz) petite dice tomatoes undrained
~12oz uncooked medium shrimp, peeled and deveined
DIRECTION
In a big pot, brown sausage and chicken in oil. Remove with slotted spoon and keep warm. In drippings, sauté red peppers, onion, and celery until tender. Stir in the seasoning; cook for 5 minutes. Stir in chicken broth, rice and sausage mixture; bring to a boil. Reduce heat and simmer for 10 minutes or until rice is tender.
Stir in tomatoes and shrimp; cook for 10 minutes or until shrimp turns pink; stirring occasionally .
Goes good with cheesy garlic bread.
