Sauce, creamy spinach or basil

2 Tbsp | Olive oil, divided |
1/4 C | Onion, chopped |
1 clove | Garlic, minced |
1 C | Spinach, chopped |
Basil, alternative | |
1 Tbsp | Flour |
2 C | Nut Milk, unsweetened plus more |
1/2 C | Cashews, soaked |
1 Tbsp | Nutritional Yeast |
1/2 tsp | Salt, plus more to taste |
1 Lb | Pasta |
- In small sauce pan over MH heat 1 Tbsp oil. Cook onion & garlic stirring often 5-6 min. Add spinach/basil cook about 2 min until wilted & bright green. Transfer to bowl & set aside.
- in the same sauce pan, heat oil. Whisk in flour with wire whisk & cook less 1 min. Gradually add milk stirring constantly until thickened. Add spinach mix to pan stir to combine. Remove from heat & set aside.
- In blender process cashews, basil sauce, nutritional yeast & salt until creamy. Return to saucepan & heat to desired temp. Add more milk or salt to taste.
- Add cooked pasta to sauce, tossing to coat. Serve immediately. Garnish with fresh spinach/basil.
