Roasted Edamame with Sea Salt and Cracked Pepper

16 oz | frozen shelled edamame |
2 tsp | olive oil |
1 tsp | sea salt |
1/2 tsp | black pepper |
Thaw the edamame for about an hour in a strainer overr a bowl.
Preheat oven to 375.
Dry edamame as much as possible after rinsing with warm water.
Toss the edamame with olive oil, salt and pepper in a lrage bowl.
Spread the edamame in a single layer on a sheet pan. Roast for 30-40 mins. Stir every 10 mins. Best if eaten within a few hours of roasting.
